||Leigh is a chef with over 20 years' experience and his love for sriracha has seen him take a basic version of this sauce and transform it something unique. He has taken fresh red jalapeños and smoked them himself over apple and hickory wood and then uses this along with the Caysan to make the fermented base that is Sriracha. If you are fan of either sriracha or smoky sauces then this one has to be on the list.
||We follow the same fermentation process as our medium sriracha, with the addition of red jalapeños smoked over apple and hickory wood. The sauce is then cooked and balanced leaving a delicious sweet, salty, sour, spicy sauce with a smooth lingering smokiness on the palate.
